Cuban Style Moros - "Rice" And "Beans"

Ingredients

MEAT

  • 2 Tbsp Avocado Oil
  • 8 Oz Peas, Frozen
  • 12 Oz Cauliflower, Riced, Fresh or Frozen
  • 1 C Yellow Onion, Diced
  • 1 Ea Red Bell Pepper, Diced
  • 1 Ea Jalapeno, Diced
  • 2 Ea Garlic Cloves, Diced
  • 1 Tsp Salt
  • 1 Tsp Salt
  • 1 Ea Bay Leaf
  • 1⁄2 Bn Cilantro
  • 1 Ea Lime, Juiced

Steps

  • 1 Heat oil in a medium saute pan or medium high heat.
  • 2 Add all the ingredients except for the tomato paste, cilantro, and lime juice.
  • 3 Increase heat to high. Add tomato paste and quickly stir fry until coated in the red color.
  • 4 Garnish with cilantro and lime.
