Bo Kho Oxtail

Bho Kho Oxtail

Ingredients

  • 1 Tbsp Avocado Oil
  • 2.5 Lbs Oxtails
  • 1 Tsp Five-Spice Powder
  • 1 Tsp Chili Powder
  • 1 Tsp Ground Black Pepper
  • 1⁄2 Tsp Salt
  • 2 Tbsp Fish Sauce
  • 1 Ea Stalk Lemongrass, Minced
  • 4 Ea Garlic Cloves, Minced
  • 1 Ea Onion, Diced
  • 1 Tbsp Tomato Paste
  • 12 Oz Coconut Water
  • 2 Ea Star Anise, Whole
  • 1 Ea Cinnamon Stick
  • 3 Ea Carrots, Peeled And Cut Into Chunks
  • 1 Tbsp Gluten Free Soy Sauce Or Coconut Aminos
  • 6 Oz Rice Or Shirataki Noodles

GARNISH

  • Cilantro
  • Thai Basil Leaves
  • Mint
  • Fried Shallots (see recipe)
  • Lime Wedges

Steps

  • 1 Heat the oil in a pressure cooker over high heat.
  • 2 Add the beef, browning on all sides.
  • 3 Add five-spice powder, salt, ground black pepper, chili powder, and paprika.
  • 4 Add the onions and carrots and cook until translucent.
  • 5 Add the minced lemongrass, ginger and garlic. Cook for 2 minutes.
  • 6 Add the fish sauce.
  • 7 Add the tomato paste.
  • 8 Stir and cook uncovered for 5 minutes.
  • 9 Add the water, coconut water, coconut aminos, star anise, and chilli paste.
  • 10 Seal the pressure cooker and cook on high pressure for 1 hour.
  • 11 Strain everything out, discarding the star anise, any large chunks of lemongrass, and cinnamon sticks.
  • 12 If you like soup, you can serve at this stage, otherwise reduce the broth until a sauce forms.
  • 13 Garnish with cilantro, basil, mint, lime wedges, and fried shallots.
