Salmon Nicoise Salad

Salmon Nicoise and Honey Mustard

Ingredients

MEAT

  • 1⁄3 Lb Salmon, Sockeye
  • 1 Tsp Avocado Oil
  • 1 Ea Hard Boiled Egg
  • 1⁄4 Lb Green Bean, Blanched
  • 4 Ea Olives
  • 1 Tsp Capers
  • 1 C Butter Lettuce, Hand Torn
  • 1 Tbsp Red Onion, Sliced Thin
  • 1⁄4 Lb Sweet Potato, Boiled or Roasted

DRESSING

  • 1 Tsp Honey
  • 1 Tsp Dijon Mustard
  • 1 Tsp Shallot, Minced
  • 1⁄4 Tsp Salt
  • 1⁄4 Ea Lemon, Juiced
  • 1 Tbsp Olive Oil

Steps

  • 1 Preheat the oven to 320 degrees. Rub salmon with avocado oil and season with salt and pepper. Bake until cooked to your liking, usually 10-15 minutes.
  • 2 To make the dressing, place the honey and mustard in an extra small mason jar or glass / plastic container. Whisk the two ingredients together with a fork.
  • 3 Add the other ingredients, secure the lid, and shake vigorously.
  • 4 Assemble the salad and enjoy!
